cafe de olla <3

Currently laying in bed, typing this on my WordPress app, because the exhaustion is too real…

I made cafe de olla today! It was amazing. My roommate Kyle and my BFF Britt both approved! Holllaaaa.

I drank a lot of this in Mexico and got a bit hooked so I had to figure out how to make it myself… I compared a few different recipes and ended up with this:

FIRST, in four cups of water, dissolve a little less than 1/3 cup of  this:

Also throw in half a stick of Mexican cinnamon or whatever cinnamon you can find.

Bring that to a boil or at least cook it until all the sugar cane is melted in. 

Take the pot off heat and then use 4 Tbs of pretty seriously ground coffee and throw it into your sugary water and cover the pot to let the coffee steep for 5 minutes. Side note: I think a darker roast is a better choice than a breakfast blend because the stronger, more intense flavor of a dark roast would balance with the sugar in the drink. But if you just want caffeine and sugar, then by all means use a lighter roast!

Next is the hardest part in my opinion. You have to strain out the coffee grounds. 

I used a French Press for convenience! (Also please don’t mind the background… I was making lunch… More Mexican food!)

I know the coffee looks dark and scary and bitter but it’s actually so smooth and just sweet enough that coffee afocionados and “coffee” (aka milk) drinkers alike will love it!

Not the most nutritious drink ever, but whatevs. It’s tasty and amazing and should be made and shared every once in a while!

Come on over for breakfast some morning and I’ll make us cafe de olla and chilaquiles.

Day 1

Good morning!

Yesterday was pretty fun. I walked almost 11 miles. Hahaha!

Yesterday I woke up at 7ish and went to the main guest house for breakfast. A bakery down the street supplies the hostel lots of bread every morning and the coffee shop across the street supplies reaaaaally good coffee.

Afterwards, I got ready to face the cold and headed out to Stump Town Coffee. I got an almond milk cappuccino and it was nice!


As I was drinking it I decided to head to Forest Park next. I figured out what bus to take and sort of just hopped on. Luckily, the bus driver was super nice and she helped me out a bit.

Once I got off I had to walk up some huge hills to get to the trails but it was worth it.






I decided against walking all the way back so I requested my very first Uber. It was convenient and cheap, but Uber is pretty evil sooooo…

I ended up taking a nap at the hostel because I was tired and cold. When I woke up, I headed to the coffee shop across the street for a pick me up. The coffee really is so good. And they had vegan pastries! This one is a banana chocolate chip muffin. I’m pretty sure Portland is more vegan friendly than ATX.


Afterwards, I called yet another Uber to take me to the Historic Mississippi District. There were LOTS of funky shops and I went in and out of almost all of them. I decided against getting another ride home so I walked back to the hostel. It took a while! I got to cross the Mississippi River by foot which was pretty neat.

I think that I like the Pearl District the best… It reminds me a lot of S. Congress!

After I got home I walked some more to Trader Joe’s to buy stuff for dinner! The hostel has huge fridges and kitchens so that you can actually make things! I ended up eating veggie patties, vegetables, and pita chips with an obscene amount of hummus.

It gets dark at 4:30ish here so I kind of holed up inside because I was cold and tired and I had gotten a really early start! I got a lot of sleep though and I feel really good now!

I’m thinking I may run to Washington today!



Good morning and happy Friday! It’s the weekend! 

I don’t have much on the agenda which I am insanely pleased about. I was going to do a brick workout with Texas Triathlon this morning, but I woke up and ate breakfast and went back to sleep. My whole body felt droopy and I ended up sleeping for two more hours, so I guess I needed it! Last night I swam 2200 yards at Greg! That’s a little over 1.2 miles. It made me even more excited for 70.3 in a couple weeks!

Also, if you know me you know that I am addicted to coffee. Well, yesterday I went caffeine free all day! Coffee didn’t sound very appetizing in the morning and I felt pretty great all day, so I went without it! However, today, as I write this my pot of coffee is finishing brewing. 😉 I am weaning myself off of so much caffeine though. My coffee is half-caff!

I’m in the mood to cook and bake today, so maybe I’ll have a recipe later!

I love mornings.
I love waking as the sun rises, or even waking up earlier to actually see it happen.

I love the sounds of coffee brewing.
Also, I really love breakfast.
And I love visiting home. A giant kitchen all to myself and peace and quiet.

Hey! I went to a coffee shop today to study for my bio test this Friday. I ordered the bottomless iced coffee and ended up drinking two glasses… At 5 p.m..

Yeah, bad idea. Afterwards, I went to Gregory to swim laps. I wanted to get another workout in and I was trying to tire myself out. However, after 700 yards, my stomach started to really hurt so I called it quits. ):

And now, it is 11:14 and I am WIDE AWAKE! I even went to HEB just a bit ago to buy bananas because I randomly decided that I desperately needed them for breakfast.


I also had a bowl of Honey Nut Cheerios because my stomach is a bottomless pit today.

Anyway, on to the actual point of this post!

To be 100% honest, I did bake something new-to-me, but it wasn’t from my pins! Hahahaha! I made Martha Stewart’s raspberry cream cookies! Mmmmm. I gave them away to Sabrina and Mathew because it was too tempting to have them around! They were basically just two sugar cookies held together by a raspberry-white chocolate cream! I even had to ride my bike to HEB to buy more sugar and all-purpose flour and white chocolate. It was fun!

Today! It was the coffee shop I went to! Hahaha! Look it up Mozart’s Coffee. I had been years ago with Sabrina and I wanted to go myself. It’s on the lake and the patio is so nice! The weather was perfect, too. Next time I’d like to go at night! I didn’t take any pictures really because I was being a flashcard making machine. 😉 The place smells like something odd is burning but that’s because they actually roast their beans on location! I loved it!


That’s it! This was a pretty randomly decided post! Hahaha! Wish me luck at my 8 a.m discussion tomorrow.



This is going to be extremely random. I’m warning you now.

So I’m sitting in Thunderbird Coffee (a stone throw from Sabrina & Mathew’s house!) and the music is putting me in an odd thoughtful trance, so here goes…

1st: I’m homeless now. To me, home is not necessarily a place. Home is just something that makes you feel so safe and secure and comfortable. Home can be a place but it can also be an activity or a person that you take comfort in. Well, my home is no longer. I don’t consider running my home because it’s more like my vacation haha! Anyway, as I realized this yesterday, I began to feel so sad. But then I remembered, I’ve always wanted to be a vagabond. I’ve always known that I have wanderlust in my bones. Now I’m free to act on it.

2nd: My first college spring break has been anything but wild. Yesterday I felt so bored and lazy and it was KILLING me. However, I then realized that it was my chance to enjoy me time and just relax. So that’s what I did. I’ve also gotten ~10 hours of sleep for both of the past nights which is unheard of for me! yay for catching up on sleep!

3rd: Happy Pi Day! Today I ran a very fast 3.14 miles in celebration! As I was running, I thought about the Rookie Tri that I’m signed up for in the beginning of May and I got so insanely excited. I love feeling my body get stronger and stronger everyday. It’s the one thing that I get to be in control of.

4th: Bluebonnets are slowly but surely popping up 🙂 if you know me, you know I love flowers! So you can imagine the giant smile that pops onto my face every time I see one!

5th: Iced coffee makes me weirdly hungry. Good thing I brought a Pumpkin Pie ALT larabar!

6th: I’ve decided to plan a freaking awesome summer trip. Where and when? Yo no se. But it will be amazing.

Ryan Gosling just gets me. 😉

Rain Day // Rest Day

Hello friends,

Happy Super Bowl Sunday! I will not be watching the game today. Why? Well, for one, I don’t really know who’s even playing. Two, more importantly, I don’t care who is playing. And three, I don’t even know what channel it would be on anyway! ;]

Instead, my Sunday has been productive and also so lazy. 

It’s been productive because I have:

  1. Washed all the dishes & towels
  2. Grocery shopped a bit {yay for quality toilet paper!}
  3. Met up to study for chemistry
  4. Finished chemistry homework

Today has been lazy because it is a rest day. I’ve been thinking to myself lately how much I truly love to run and workout and I don’t want to do anything to jeopardize that! So, to prevent injury, overtraining, or getting sick, I am taking a rest day today. It also happened to perfectly land on a cold, cloudy, rainy day, so I don’t feel bad about missing out on the sunshine. There is none! And seriously, people, I’ve done nothing but chill. Normally, when I have a “rest” day, I always do some abs or some light weight arm stuff, but NOT TODAY. It’s pretty hard to resist, but I know it’s for the best.

I am currently training for three races…. Hahaha:

The Austin Half Marathon on February 16! Two weeks! :] I am so excited and beyond ready! 

The Rookie Tri on May 4th! 300 m swim, 11.2 mile bike, 2 mile run. I’ve done this race before,  but I didn’t put much effort… This time I want to go fast!

Oilman Texas Triathlon on November 4th! 1.2 mile swim, 56 mile bike, 13.1 mile run. It will be an exhilarating challenge! {The official training plan for that starts in July…}

But since this semester has started, I have upped my training. More running, more cycling, more strength training. 

And it makes me so very hungry. Like all the time. Luckily, when the hunger strikes, it’s healthy cravings. But it’s still hard not to grab a spoon and a peanut butter jar and eat to my heart’s content.

I’ve been focusing more on protein, but mainly lean sources like tuna or salmon {in a can}, and chicken. I also really love ground turkey, but I am currently out!

I know that muscle burns more calories than fat, so it’s kind of to be expected. But I’ve never felt like this before! At least I know my metabolism is roaring! ;]

In other news, today when I met with a friend to work on chem, we went to a coffee shop called Bennu Coffee. I ordered a soy steamer {basically a latte, but with coffee and not espresso} and it was so delicious. 

Alright, I’m off to just lounge around some more and try to resist the urge to eat all my food!

Making new friends is really really awesome. SO AWESOME!

My back is pretty sore today. Weird.

Oatmeal is such a good breakfast. 

Shoot, I just remembered that I’m out of bananas! :O

And also, my lunch will be awesome: PB + banana sandwich w/ cinnamon, honey, flax and chia seeds. Tomatoes, cucumber, celery, carrots, cauliflower, and green bell pepper w/ hummus.


Okay, well I need to finish my coffee and head to the bus stop!
