Today I have a “recipe” for you!

I say “recipe” because I like meals that are thrown together in the blink of an eye. Seriously. I like quick and easy with very little clean up!

I also really really like breakfast for dinner. And colorful meals. So, without further adieu:

Greens, Eggs, No Ham.


I started by sauteeing about two and a half giant handfuls of organic kale in olive oil with pepper and a bit of salt. While the kale was getting a bit crispy, I cut up ~1/4 each of a red, yellow, and orange bell pepper and then those got thrown in with the kale. Finally, I cracked two eggs straight into the pan and waited until the whites and yolks were cooked enough!

And voila! It was so so good. So simple, so tasty, and so nutritious. A piece of toast slathered with hummus would’ve been an awesome addition to this, but I’m surprisingly all hummus-ed out at the moment! 😉

You should definitely try this out because it was amazing!



P.S. In case you’ve been reading my blog for a while, I’m not 100% vegan. I don’t eat meat and I avoid dairy as much as possible, but I do eat eggs. They’re delicious and practically my only B-12 source. Also, I’m definitely NOT even vegetarian when I’m at my brother’s house because they cook awesome food and there’s no way I’m going to pass that up! 🙂

Hi, I’m alive!

I’ve just been doing ALL THE THINGS and sitting down to write a blog post hasn’t been one of them.

I’ve been eating, training, biking, running, swimming, working, adventuring, reuniting with friends, laughing, rock climbing, cleaning, driving, planning, relaxing, sleeping, cooking, grocery shopping, yoga-ing, and so so so much more!

I’ll hopefully be back soon with something of more depth!

My Fav Foods: Because You Need to Know.

As I’m killing time before my run (letting my lunch digest), I mentally attempted to formulate a Top 10 Favorite Foods list… I completely failed. If you read my twitter, you’ll see me professing my love for random foods on a pretty daily basis!

What can I say? I love all foods. All foods are bae. Yes, BAE. As a runner and nutrition major, food is almost constantly on my mind. And I’m hungry a lot. And I eat a lot more than people expect. Also, I have a bad habit of inhaling my food sometimes. But that doesn’t mean that I’m not enjoying every single piece! 😉

HAHAHA, but without further adieu, here’s a list of the foods that popped into my head when trying to make the Top 10 list:

AKA: Foods typically on my grocery list:
Nut butters
Whole wheat bagels (UNTOASTED)
English muffins
Bread of any kind
Greek yogurt
Olive oil and vinegar
Strawberry jam
Brussel sprouts

Tuna in a can (yes. I’m weird.)

Also, I am more than 100% sure that I left out a ton of delicious things on accident. Not to worry, they still hold a special place in my heart.

An Unexpected Tuesday Ten

Howdy y’all! ; )

Guess what? I’m typing this up on a Mac right now!! Haha, the office in my apartment complex has one so I decided to use it.

Anyway, on to the point of this post!

Today, I ran an unexpected ten miles!


I have a test tonight and I’m not schedule to work until Friday, so I have a lot of free time this week. I decided to take advantage of that and make it a peak training week.

Nonetheless, when I headed out for my run today, I was planning to do 7 or maybe 8 miles. 

Eventually though, I got in the groove and felt like I was gliding (I love that feeling) so I just kept going!

The weather is lower 70s, sunny, and very very windy. There were a few moments that I thought I was going to be blown over! But I persevered : )

I finally checked my Nike app to see that I had gone 7.56 miles! I was close to home and could’ve stopped, but I thought “hey, in math class, that would round to 10, so I’m going to do 10!”

My mind works in silly ways. ; D

When I got home, I was so hot and thirsty! I had carried my Camelbak handheld with me, but warm water is NOT refreshing when you’re getting pretty hot!

I was (and still am) craving froyo in a major way. Maybe I can rope someone into going with me…

Anyway, I stretched, made myself a PB+J, took a shower, made a real dinner of eggs, spinach, salsa, avocado and then baby carrots with hummus. T’was scrumptious!

Pretty soon I am going to head to campus to cram a bit more and then tackle that chemistry test!

Our last test was the day after I had been broken up with… Sooo as you can imagine, my head was not in a good place and I did pretty poorly on the test.

Lucky for me, my prof drops the lowest test grade, and I’m coming at this one with vengeance! ;]

Now I’m just debating whether or not that froyo is going to happen… {Sabrina and Mathew could come… It’d be my treat! Haha!}

Do you crave anything after you workout?



I just got the most random, most intense craving for snickerdoodles. I don’t even really recall liking snickerdoodles, but I want them.

Anyway, I’m here to update you on my training! But that seemed a bit boring, so I’ve decided to make it into a list!

Kind of like a “you know you’re training when…” But really it’s just a list of random random things that I’ve experienced or thought about..

1. The post-run feeling is 25% endorphins and 75% exhaustion.
2. The post-run hunger hits you almost a full 24 hours later!
3. Setting a PDR in the pool makes you so proud! {1100 yards!}
4. Carbs become your best friend.
5. You actually are starting to need more carbs than you can keep up with! {I thought I was the carb queen!}
6. You become well acquainted with the dreaded “wall” when you’re setting PDRs on every Sunday run.
7. People ask if you’ve been going to the lake when really the tan is from running outside.
8. Tart cherry juice is actually quite tasty.
9. Ice baths aren’t as bad as everyone says!
10. Not even 9 hours of sleep is enough.
11. Discovering your food is missing is enough to make anyone angry, but it’s multiplied by ten when I’m already hangry from working out.
12. My pants for work are loose in the hips and tight in the thighs.
13. You’re worried about split ends since showers are being taken so often.
14. You know your legs are tired when going uphill on the lowest gear feels impossible.
15. Pre-workout snacks are a must!

Okay that’s it! Hahaha

P.S. I would run/bike/swim five times faster than my normal pace if this stud muffin was waiting for me at the finish line! 😉


In the beginning…

My healthy lifestyle is not even a year old. I’m not 100% sure of the actual date I decided to make the switch, but I’m going to go with somewhere in mid June 2013.

I’ve learned a lot since then and I’ve changed the way I eat and treat my body with the information I pick up on.

For example, I’m a firm believer that your body craves what it needs (to an extent, of course.) Last week, I unintentionally carboloaded because I was out of town and carby foods are typically the cheapest and most convenient. I kicked myself for it at the time, but that weekend I went on my 15 mile long run. Never hit the wall once. I had blueberries in my baby fanny pack and I didn’t need to touch them once. Heck to the yeah.

So today, I finally caved and made muffins. I had been wanting to make muffins to stash in my freezer, but I was too lazy until today. The muffins are fairly random but yummy. They are made with whole wheat, egg, milk, Greek yogurt, brown sugar, carrots, raisins, and nuts. As soon as they came out of the oven, I ate one. And then another. And then a third. An hour later, I are a fourth.

Along with a small cup of cereal with milk.

Um, what? The weirdest part was my stomach still didn’t feel truly satisfied. I didn’t get that urgh I’m full feeling.

I’m going to assume my body was in need of carbs and calcium. I know it wasn’t just a sugar craving, because I have 72% and 85% dark chocolate in my closet! Instead, my body chose to crave the wholesome muffins. No regrets.

This morning I ran 3.14 miles (hey it’s pi day!) at an 8:50 pace. That is insanely fast for me! Later, I ran the three stories of stairs by my apartment 5x. It wasn’t a whole lot of work to be craving carbs so badly, but my body knows what it needs better than I do.

Funny huh?

Anyway, back to the point. I initially started to eat healthy because I wanted to have bulging quads. No joke. That was my initial goal. I admire muscular legs more than anything else and that’s what I wanted.

Slowly but surely, that goal morphed into simply losing weight. I wasn’t counting calories, but i was very careful about what I ate. My only extra snack during the day was a pre workout snack.

Again, the goal morphed into losing weight and being muscular. So in order to do that, I started to ditch the pre workout snack. People, that is so dumb.

Thank the heavens, my goal shifted again to what it is now. Getting stronger every single day. I think what finally made that my goal was absolutely falling in love with running. And I haven’t looked back.

Now, I know to appreciate my body and everything it asks for. I’ve gained weight since officially realizing this goal, but I know it is from muscle.

To me, getting stronger and healthier is waaaaay better than just focusing on being skinny. I’ve developed physical and mental strength because of it.

I have one spectacular half marathon under my belt and now I’m so ready for more.

Half marathon -> Marathon -> Ultra

You better believe it!

I know this post is pretty lengthy, but I felt the need to write this all out.

I dream of being an inspiration to many, because I know how inspiring some women for me (especially reading their blogs!)

Ramble rambly.

I have many random things to tell you.
Some have a common theme. Some do not.
Let’s do this.

1. Today while I was waiting at the bus stop (I was too cold and lazy for my bike) I saw this perfectly good cookie on the ground. ): it even looked like chocolate chip. Sorry cookie.


2. Because it was muy frio (well not really) and I hadn’t gotten much sleep last night, I brought my cafe to school.


3. Today I had a swim workout planned. I wanted to do 1000 yards, but I was hungraaaayy. I ended up doing 500. 300 yards casual and comfortable. 100 yards sprint with just my arms. 100 yard cool down. I am a little tanner because the sun was out!

4. Today I went University Health Services for some junk and while I was there I got weighed on a scale. I’ve decided not to weigh myself daily or weekly or ever! I like to base it off of how I feel in my clothes and more importantly, in my own skin. Well, I was up 5 pounds since the last time I weighed myself (early December.) but you know what? I felt ridiculously happy when I saw the number. Want to know why? Because I have felt better than ever in my body lately. And I KNOW that those pounds are muscle. My ever increasing number of push ups and running pace tells me that :]

5. Another confidence booster: Today at work, a usual came in for her iced coffee. We chatted about running and exercising and overall health. She asked if I had been in cross country and track throughout high school. I told her no. She asked “well what sport? You were obviously an athlete.” Again I told her no. She stared at me and said “you are an athlete though! Your whole body is athletic!” I almost died of happiness. I then told her that for all of high school I was technically overweight. It was an awesome, freeing moment.

6. Tomorrow I have work in the morning and then I am cranking out 14 miles with my own two legs. Heck to the yeah.

7. I went to whole foods today and bought more stuff… Hahaha so dinner turned out to be a slice of Seeduction bread, unsweetened banana chips, and almond butter. I didn’t have time to go home before work so I just snacked on what I bought!

8. Well that wasn’t a very substantial dinner. About 20 minutes ago I decided that I wouldn’t be able to sleep with my stomach rumbling so much. I headed to the kitchen, ate three slices of turkey, some flax tortilla chips, and a hard boiled egg. It hit the spot. And was jam packed with protein.

9. But now my stomach hurts :[

10. My mom is having surgery tomorrow morning (nothing major, so I’ve been told) so keep her in your thoughts!

Picture Crazy! Well, kind of…

Third post of the day?! What?!

Well, since this morning I’ve been practicing taking pictures! Hahaha :]

So here are a few more for you!



The post-run snack I was talking about! I ate half after my run and the other half once I got to school. It was SO yummy. There was more of a crunch than in a regular Larabar and that sort of bothered me at first, but it was so worth it because it really tasted like pumpkin pie! As I ate it I was craving a soy latte to go with. Mmmmm!


For some reason, the Larabar did NOT fill me up! Maybe because I’m not used to running in the morning, but for some reason I started to get RAVENOUSLY hungry! I kid you not. I was going to swim after my lit class, but I was so hungry I needed to eat ASAP. I didn’t have anymore snacks though so I just headed home. Upon arrival, I threw together a breakfast wrap! It had 2 scrambled eggs and 2 Jimmy Dean all-natural, hand made by yours truly, sausage patties and cheese and spinach. I inhaled it, people. I was still feeling hungry though. Like I said, I was ravenous. I gave it about 20 minutes before I accepted that the hunger was real. So this happened! What you’re looking at is 0% plain Chobani w/ a little PB, granola, and blueberries. YES YES YES. It was delicious…


It prompted me to mentally add granola to this list so I could eat it with the Chobani ahhahaha! I LOVE to grocery shop. It’s so fun and exciting! Anyway, as I started to get so hungry in lit, and soooo bored, I wrote my grocery list for this week! Yes, I got more Chobani and I bought Nature Plus granola that I’ve had before! Yummm probiotics!

That leads me to a question!

I understand that this blog is a random conglomerate of my thoughts and every day life…

BUT would anyone like to see more “what I ate” or grocery lists or training talk?!

Seeing as nutrition sparked my love for all things health and fitness, I wouldn’t mind doing that more often one bit! ;]

A Thousand Words

A Belated Valentine…

Heads up, this post may be ALL over the place. I’m just so happy and there’s so much to share, so it might get a bit jumbled… I’ll do my best to go in order!

This weekend I headed back to Magnolia to visit and celebrate Valentine’s Day with Alex! If you regularly read my blog, you know that Alex was supposed to come to Austin, but eh life happens. As always, I had a good time! I never thought I’d really care about going back to my home town, but I really love it. Of course, the people I go back to are the biggest factor, but there’s also something so sweet about escaping the busyness that is Austin.

Alex and I saw the Lego movie and it was hilarious. Alex had already seen it, but I hadn’t and I was pleasantly surprised by how entertaining it was!

He got me a giant bouquet of flowers for Valentine’s Day :] They are now sitting on my desk!

Saturday morning I woke up and headed back to Austin. I had work! But first, I met with my dad, Erica, Sabrina, and Luke at Whole Foods for lunch and then we went to the half marathon expo! Did you forget?! My half marathon was yesterday, but I’m getting there… ;]

I had a closing shift on Saturday, but I already had all my gear packed for the next morning. So as soon as I got home, I took a hot shower and got in bed and passed out!

5 a.m. on Sunday morning my alarm went off. At first, I was wondering why I had set an alarm and almost turned it off! But then I remembered about my race and hopped out of bed!

I downed a bowl of oatmeal w/ PB, 1/2 banana, blueberries, cinnamon, flax & chia seeds, and a cup of coffee. Then I headed to my dad’s hotel to meet him and Erica!

For my race, I wanted to run it in 2:15. Sub 2:15 would be the best, but I would just be happy somewhere around 2:15. Well, at the expo {I had to leave early for work} my family had picked me up a tattoo with mile splits on it for a 2:10 half marathon.

Once I had the tattoo on, I decided to attempt it. Why not? Worse comes to worst, I slow down and go for the 2:15.

Well, during the race, my body had other plans. I finished my race in 2:05. WITH ALL THE HILLS IN IT TOO.

I nearly cried when I crossed the line.

I love to run.

Every moment I felt tired or weak or hurting, I digged deeper and pushed harder.

So that leads me to my belated valentine…

My body.

Every morning I wake up and stand in front of the mirror and scrutinize my body. Sometimes I think “yay, I’m not so bloated today” and other days I feel like a whale.

But none of that matters. Because you are always stronger than you think you are. Always.

My avg pace for the entire half was 9:33. Never ever would I have dreamed of doing that, but my body had the confidence that my mind did not.


To be honest, while running, my mind was almost completely blank. I was just so in tune with my body and how strong I felt that I just couldn’t think of anything else.

Thank you, body. For always being there for me. Whether it means sprinting a half marathon, holding two minute planks, or doing push ups until I can’t. You’re the best. And I’m sorry for any hurtful words or thoughts I have hurled at you. You are so undeserving of that.

You have freaking awesome calf muscles and quads and abs that are slowly starting to show. Your biceps actually pop out when you flex hard enough! ;] So thank you. I love you.

I strongly believe that if you have faith in yourself, you can accomplish anything. And by anything, I mean anything.

So try it for yourself.

Love and believe in yourself.
