The Emperor’s Vegan Dessert Bars

Hey hey!

Coming to you live with a fun little recipe I’ve made a few times this fall!

It’s basically this recipe with a few adaptations!

Instead of brown sugar, I used organic coconut palm sugar. Instead of the oil, I used a splash of almond milk. And instead of applesauce, I used one and a half mashed ripe-ish bananas!

You guys, it’s so so so good. Please make these. 🙂


They’re vegan (yay for health, the earth, and animals!) and just so good.

Because I’m Happy

Life rocks so much. True story.
Even when it really doesn’t seem like it. It actually totally does.

Today I am happy to be alive. To live in Austin, TX. To have an amazing family.

Today I am happy I had my heart broken for the first time. To have discovered myself. To know who I truly am.

Today I am happy to attend UT. To study things I am passionate about. To strive to help others.

Today I am happy for iced coffee and a splash of milk. For music that makes me feel on top of the world. For the ability to walk.

Today I am happy to be alive and well. As I am every day.

I can only hope you are happy as well.




Reasons to be happy today:

  • I woke up this morning.
  • My coffee was terrible, but it was still fun to use my french press again.
  • I only have one class today.
  • I have a run in the sun planned.
  • I had oatmeal for breakfast.
  • People love me.
  • The sun in shining.
  • I have flowers on my desk.
  • My hair was a wild mess this morning and it made me laugh.
  • I miss my best friend, but I always have a constant reminder on my finger. It makes me smile.
  • I get to go to school and actually study things that interest me this semester.
  • Erica is coming to ATX tomorrow!
  • I’m going to another Quality Workout tonight and I can’t wait to socialize.
  • This size medium shirt is way too big now.
  • I can move freely.
  • I can walk and talk and smile and breathe and run and jump and dance with joy.
  • I have a boyfriend that I drive absolutely crazy, but he still loves me.
  • My half marathon is in exactly a month from today.
  • Mumford & Sons is playing on my Spotify.
  • I have blueberries and blackberries and a mango in my fridge.
  • The sun is streaming through my open blinds right into my eyes. And I love it.
  • It’s January 16, 2014. 




Making an effort..

I’ve been making an effort to make every single day an amazing day! :] It’s definitely gone well so far and the weather is also helping! ❤

This Weekend…

Was amazing 🙂

Alex came to visit! ❤

He came up after he got off work on Thursday night, which was amazing since I had just finished my last test for two weeks, so I was finally stress free. He got to sleep in while I went to class on Friday morning. Not going to lie, it was tough sitting through my 8 am knowing my love was fast asleep and I had been awake since 5:45 :\

Haha, but anyway, I survived and finally I got home and Alex & I went to lunch at Joy East. Joy East is this big Chinese buffet right by where I live. We like it a lot (seeing as it was our second time going!) Afterwards, we adventured to Whole Foods and then HEB for fun and for groceries.

That night we went to see Prisoners. OH MY GOD. That movie is insane. First off, before the movie started, the person behind us accidentally spilled ketchup on the both of us, so that stunk, but the movie made up for it. Talk about a thriller. It was so freaking suspenseful I thought I was going to die. But funnily enough, Alex and I called who did it in the very beginning and we were right except for very few minor details!

On Saturday we did some adventuring and Goodwill shopping and some chilling too. Saturday night we went to Houndstooth Coffee on N. Lamar (after our failed attempt at going to Epoch Coffee) and it was so good! We both got a ton accomplished and Alex was ridiculously pleased with his vanilla latte! It was cute 😉

My cup had a Texas on the bottom and Alex’s didn’t, so it was a little unhappy haha!




We had plans to go running the next morning, but it rained ALL night and into the afternoon and now it’s just dreary and gross!

Because our running plans got rained on, we made pancakes for breakfast and decided to try and go to Epoch again for coffee and more productivity. 

First though we wandered around Target and I got excited about the Christmas decorations that are already out!

P.S. Notice my Halloween socks? Ask Alex, I was very excited about those ;]


Sadly, once again, Epoch was insanely crowded, so we went to the Coffee Bean and Tea Leaf instead!

Later we came back to my house and made lunch and watched the Texans lose.

Eventually it was time for Alex to go home 😦 I’ll see him in two weeks, but it’s still so sad to watch him go…

However, I am feeling a little better now and I’m contemplating a workout in a bit. My head kind of hurts, so I really just want to be lazy.


On an unrelated to the weekend note:

School is going well. Tests are hard, of course, but I am having fun with the challenge! I had three straight weeks with tests and now I am test free for little while! :] Although, after writing that, I just remembered I have a quiz on Tuesday… UGH. But it’s in my favorite class (Identity Development in a Multicultural World) so it shouldn’t be too bad! 

Running is going GREAT! I tackled my 6.25 mile run on Thursday outside in the cold around campus and it went AMAZINGLY WELL. Normally, when I’m running hills, my pace slows down, but this time I managed to keep my pace faster than my average, even with the hills! :] :] :] This weekend I was supposed to do 6.5 miles, but that didn’t happen, so I’ll probably just wait until Tuesday and go to my 6.75.

Tomorrow I am going gluten free. Just for tomorrow though! The point of this is to cut down on my carb intake. I feel like it’s a majority of what I eat and I need to fix that. I run a lot, but after this weekend I just feel like I have a carb overload. Chinese food, sandwiches, bread, and pasta with no exercise is a bit much! So tomorrow is my carb detox. 

Anyway, life is good. Especially because it’s supposed to be getting cooler this week! Yippeykayay!

Pure Bliss.

My room is cold, I’m wearing my boyfriend’s hoodie, Ingrid Michaelson Pandora is softly playing, and Christmas string lights and lightning are the only thingslighting up my room. 

It’s unusually dark outside, but that’s due to the dark storm clouds that came rolling in, accompanied by loud thunder and BRIGHT lightning. 

It all makes me so happy :]

I only had classes until noon today, since then I’ve: completed almost all my homework, did a quick but challenging dumbbell workout, and have relaxed. I had a hot cup of green tea this afternoon and a cup of coffee this morning, but if someone showed up with a Pumpkin Spice Latte for me, I would invite them in and bake for them to express my gratitude. ;]

Speaking of gratitude, lately I’ve been thinking of some things I am unbelievably thankful for so here they are! 

My family: For dealing with me and loving me and supporting me.



Alex & Eileen: Alex, for being the best boyfriend any girl could possibly have. Eileen, for giving me the best friendship that others could only dream of.


School: Calculus may already be killing me, but I am so lucky to have the opportunity to pursue such big dreams {even if they are always slightly changing.}

Hello, September!

Hello hello hello,

and happy {late} September! I am giddy about September because this is the month when fall becomes official and that makes me so merry! :] 

I haven’t posted in a couple of days because I have been busy and happy!

This weekend, my mom, Erica, and Alex came up to Austin to visit! :]

We trekked all around Austin, explored high society grocery stores, chilled, and had a really freaking good time ❤

However, they left this morning, and back to college life I went. 

I ended up falling back asleep until 11 {WHAT?! If you know me, you know this is a rare occasion.} Afterwards, I went to Luke’s house to pick up my laundry since our dryer’s broken. And guess what?! THEY WERE STILL DAMP. So I had to hang everything to drip dry.

Sabrina and I had plans to workout so I quickly consumed some fuel, (one piece of wheat toast + 1/2 banana + flax seeds + honey + crunchy almond butter) t’was delicious.

After discovering that my bike’s back tire was flat, for the fourth time in three months, we went to Mellow Johnny’s for a new tire and tube. Hopefully, soon, I’ll be riding to campus for school instead of taking the shuttle!

After that struggle, Sabrina, Mathew, and myself headed to campus to go to Gregory. I ran 2.5 miles on the indoor track, but sadly I don’t know my time or pace because my Nike app flipped out. I followed that up with some push ups, abs, and 60 sec wall sit. It wasn’t much, but I moved my muscles and broke a sweat!

I’m a little worried about the pain in my left hamstring. I’ve been stretching it and watching it, but I’m not very good at relaxing or taking things easy. Yet, I don’t want to do any serious damage! I think I’ll tape it for my 2.75 mi run tomorrow.

I’ve been procrastinating some difficult calculus homework by writing this post hahaha :] but also, I have a batch of these beautiful pumpkin muffins in the oven! I’ve made them before and they’re amazing with a cup of coffee or almond butter and milk.

Well, I should probably get to integrating now! I’ll talk to ya later!
