Fall 2014: The Semester Juliana’s Brain Exploded

Good morning!
I’m currently sitting outside my 8 a.m. attempting to will the caffeine in my system to actually wake me up. Hahahaha! Actually, I saved this as a draft and now I’m killing time before I clock into work for my 8.5 hour shift! :O

Only one more week of class and then finals. I have two final tests and a final essay, but I’m not too worried! I’m ready for Dead Days so that I can truly get in the study zone.

I am beyond ready for summer and freedom and fun.
However, just a couple days ago I registered for my fall semester.

6 classes for 16 hours + the class I’m an UGLA for. it’s going to be a busy semester. But I’m pumped!

Here are my classes:

Biochemical, physiological, and cellular functions of energy macronutrients, vitamins and minerals, and the scientific basis for current dietary and nutrient recommendations. Designed for science majors.

Basic principles of Mendelism, molecular genetics, structure and function of genes and chromosomes, populations and evolution.

Essential food components and their functions in life processes.

Primarily for premedical, predental, life sciences, and pharmacy majors. Development of organic chemical structure, nomenclature, and reactivity.

Collection and evaluation of dietary intake data, nutrient composition of food, and survey of dietetic practice.

The nature of human societies, social processes, social interaction, and the sociological approach.

+the UGS course that I’m an assistant for! I’m required to attend, but I didn’t have to register for it!

Gooooood morning, America!

Hey hey hey!

I’m writing this as I drink my iced coffee before I ride to school today! :]

Today is such a great day already and here’s why:

For breakfast I had: 2 toaster waffles {1 GF, 1 whole wheat} w/ 1/2 mashed banana, PB, pumpkin, honey, cinnamon, and chia!

I am drinking my coffee ICED because the weather is warming up!

I only have class from 9-11 today because I finished my lab on Monday!

SO that means that after chem, I’m headed to the gym! :]

I went out to the back porch to check the temperature and there were three dear running around in the field! ❤ And the birds were chirping!


I love Spring!

I bought mosquito repellent and sunscreen yesterday in celebration! Hahaha :]

Yippeykayay! Today is already great and it’s only 7:23! I plan on just making today get better and better,

I hope all of you are enjoying this warmer weather! {Well, if you live in TEXAS at least!}

College No More


Surprised/confused/indifferent about the title?

I shall explain.

I’m not going to college anymore.


Totally kidding. Kind of. Tomorrow I was supposed to have classes from 8-11, but now the university is closed until noon! Why? Because of wintery weather. Yeah. Not snow. Not ice. Just coldness.

This may seem kind of surprising, but I want to go to school!

There have already been so many cancelled classes this semester because of the cold, but I want to learn! I actually enjoy my classes and what I’m learning… Sure, the 8 a.m.s suck, but I can deal.

Don’t get me wrong, I’m not complaining about having the morning to get tons of homework done lounge around. But it’s just kind of frustrating. Yeah, the cold is pretty unbearable, but once you’re inside a lecture hall it is warm and toasty!

Also, I’m scheduled to work tomorrow afternoon because I was supposed to have classes in the morning. So I have to drive home late tomorrow. When in all actuality, I could’ve worked in the morning! #frustration 

Oh well! Life goes on.

In other news:

I’m going home this weekend! I’m bringing my bike so that I can go on a long training ride on Saturday. And then on Sunday, Erica and I are running 9 miles together! Wahooooo!

Although a week from Sunday is my half marathon… Taper? What taper? ;]

Wow, I feel completely pooped. I’ve been working hard, training hard, and studying hard. That leaves you completely wiped, I guess! But what’s ridiculous is that I know that the second I get into bed, I won’t feel as tired anymore!


Alrighty, time for me to read some blogs and maybe hopefully possibly get some school work done!

Coffee or Tea?

Let’s pretend that you and I are sitting down for a coffee (or tea) “date”!

It’s time to catch up! :]

If we were on a coffee date, I would tell you:

1. I have recently become obsessed with Ellie Goulding’s album Halcyon Days. // Specifically “Don’t Say a Word”, “JOY”, “Explosions”, and “I Know You Care”

2. Tomorrow, I have a killer freaking awesome training day planned. // Ride to campus. Swim with Sabrina. Run x# miles. Ride home. {Of course, this will all be spread throughout the day.}

3. Tomorrow, I am also meeting some of the kids from Magnolia attending UT at Chipotle for lunch. YAY for gift cards! ;]

4. Oranges are my new fruit obsession.

5. I’m trying to focus more on protein now. This does not mean paleo.

6. I took my first chem test tonight! It was over physical equilibria. I felt pretty good about it! :]

7. Alex is coming to Austin in t-minus NINE days! ❤

8. My half marathon is in 12 days and I could not be more excited!

9. Riding to school >>> Taking the bus

10. New friends are really cool.

Double days


Today has been so. incredibly. long.

But in a really good way! :]

Here’s the play by play ;]

I woke up at 8ish and had a bowl of Kashi Honey O’s with 1/2 a banana, a handful of blueberries, and almond milk. Coffee followed soon after along with an attempt to tackle some chem homework!

Then, just as I was gearing up for a run, Sabrina texted me asking if I had run yet! We ended up running together at a pleasant, casual pace. My quads are reaaaaal sore from squats last night, so I didn’t know how much I’d be able to do. We settled on 3 miles because it was February 1st! 2/1… 2+1=3. ;] We ended up doing 3.19 miles so yay for 5K!

Afterwards, I came home and didn’t shower. Why? Because Sabrina and I had another workout planned for the day.

But first I made lunch! A spinach salad with salmon, raisins, nuts, cauliflower, broccoli, tomatoes, cucumber, and beets! Quickly followed by a piece of 72% Ghiradelli chocolate {I’m almost out!} and a really juicy orange.

I worked on my homework a bit more and then it was time for workout numero dos!

I rode my bike to campus where I met Sabrina for a swim session. It was exhausting. And I was so hungry! I ate half of a protein bar as fuel {1/4 before workout, 1/4 after.}

I did 400 yards, but pretty spread out! I need to build up my swim endurance stat! As soon as we finished, I jetted home on my bike, well as fast as my quads would allow, to shower up! I also quickly ate 1/2 a whole wheat wrap with a schmear of hummus and a few slices of turkey.

Why was I rushing?

I had to meet some girls from my bio class for a study session! We went to a place called Quack’s Bakery on 43rd. I ordered a single soy latte and was sadly not impressed :[ Nonetheless, the studying went well! It was nice to have some things clarified and helping them with some stuff reaffirmed what I already understood. We studied and reviewed for two hours.

When I finally got home, I quickly got to work on dinner. I roasted up some sweet potato, zucchini, and brussel sprouts. On the stove, I sauteed some spinach and then threw in an egg! It was delicious, but not as filling as I had hoped. Just a little while after, I had the other half of that wrap with PB and jelly and then some strawberries with almond butter.

Now my tummy is happy and my body is so very tired.

I want to finish that chem homework before I study with a friend tomorrow, but I just don’t know if I can muster up the energy for it! I’d much rather just get in bed and watch The Big Bang Theory.

Hmmm, we shall see!

Tomorrow I’m hoping to get up early enough to go to some free yoga. I’ve wanted to go before but I’m always too tired.

I also really want to run again tomorrow, but it’s also time to start tapering soooooo…. #thestruggleisreal

I’ve been chugging along lately!

As happy as can be and as busy as a bee!

I am so unbelievably ready for warm weather!

I have a job!

I’ve been incorporating more strength training lately!

And I’m going to try and start running more.

Marathon training starts the week after my half marathon.

I am currently obsessed with All of You by John Legend ❤

Spaghetti squash is the bomb diggity.

Don’t forget your gloves when it’s 19 degrees outside.

Headaches are no fun.

Sleep > Staying up.

Peanut butter is life.

I’d go 100% paleo, but giving up PB?! Not a chance.

Biology is the coolest.

Soy lattes are always delicious. Always.

The Big Bang Theory is a sufficient way to procrastinate.

I’ve learned that I appreciate my parents more and more as I grow. {Love you guys!}

Making new friends is really really awesome. SO AWESOME!

You can do anything if you believe you can.

I want to do The Rookie Tri again this year.

My back is pretty sore today. Weird.

Oatmeal is such a good breakfast. 

Shoot, I just remembered that I’m out of bananas! :O

I looooove my car.

I wish I had a campus parking pass.

I’m tired. And it’s only 7…. #pitiful

I am a grandma. Well, in spirit.

Alex is coming to ATX on 2/13. I am so excited!

On the brightside, I’ve scheduled in a Starbucks trip for today, so that’s something to look forward to!

And also, my lunch will be awesome: PB + banana sandwich w/ cinnamon, honey, flax and chia seeds. Tomatoes, cucumber, celery, carrots, cauliflower, and green bell pepper w/ hummus.


Okay, well I need to finish my coffee and head to the bus stop!

That’s what my Monday is going to be this week. A marathon.

It’s soooo long and I know it’s going to be fun but exhausting.

It goes like this:

  • 9-10 a.m. Biology
  • 10-11 a.m. Chemistry
  • 11-12 p.m. Inorganics
  • 12-1 p.m. Lunch & HW
  • 1-4 p.m. Inorganics lab
  • 4-5 p.m. HW & probably a Starbucks trip…
  • 5-6 p.m. Texas Nutrition meeting — YAY!
  • 6-7 p.m. More HW.
  • 7-9 p.m. Women in Medicine volunteering.

And then I have to wait for the bus before I can finally get home to sleep! Only to wake up for my 8 am on Tuesday…

Wish me luck this week. I’m going to need it!

Meal Prep!

Happy National Peanut Butter Day! :]

I ❤ PB. I put it in my oatmeal this morning, as a matter of fact.

But I could just eat spoonfuls of it… Which is funny because I used to hate peanut butter.

Anyway, today I wanted to talk about my “meal prepping” that I do!

I don’t actually put together the meals and put them in containers. Honestly, I think that’s kind of gross. Instead, I just pre-cut and wash everything so that it’s easier and faster to use!

For example, I had pre-cut strawberries in my fridge right now! So whenever I’m craving something sweet, I can just grab a few of those. It makes it so convenient. Almost as convenient as unwrapping a piece of chocolate… (;

Well, today I went to the grocery store because I was running low on fresh foods.

I’ve decided to try and focus my diet on fruits and vegetables with some meat and whole grains tossed in but very low dairy.

I went to Wal-Mart to do my shopping because I like to save $$$$$.

I bought:

  • Head of broccoli
  • Head of cauliflower
  • Grape tomatoes
  • Cucumber
  • Yellow squash
  • Celery
  • Whole carrots
  • Chicken breasts
  • Sweet potato
  • Green bell pepper
  • Spinach & kale mix
  • I already have brussel sprouts, a big spaghetti squash, blackberries, strawberries, apples, grapefruit, oranges, black beans, garbanzo beans, and avocado!


When I got home, I put away the tomatoes, carrots, bell pepper, squash. sweet potato, and salad and then go to work prepping the rest!

The chicken breasts are pretty small, so I get sandwich baggies and put about two in each. That way, I can freeze them and then just defrost one baggy at a time when I want chicken!

The celery I washed and cut into ~3 or 4 inch pieces so that I can easily use them to dip in hummus or PB!

I washed and cut the broccoli and cauliflower into manageable sized pieces. Now, they’re easily available to throw onto a salad or cover in olive oil to roast in the oven!

Yippee! It’s much easier to eat clean when you have healthy stuff around. And by prepping the food, it’s much easier to actually use instead of being too lazy to prepare when you’re hungry! 

I also bought canned tuna and canned salmon for my pantry to throw on a salad sometime! I also already had canned beets which are insanely awesome to use and delicious. However, I really do love roasting my own beets. I just loved roasted vegetables.

Alright, that’s all I had to say!

School was cancelled today because of inclement weather (aka it was cold.) So, I ended up waking up at 6:30 {my alarm would’ve gone off at 6} and having breakfast and then falling back asleep until 10! My body needed the sleep. My brain and body felt exhausted. Hey, I’ve been working and training hard!

After the store and meal prepping, I did a quick workout which honestly left me breathing kind of hard and it was only 8 minutes long! 

Now I need to accomplish some homework and drive to campus to buy a lab book.

Tomorrow I’m going to Dallas to watch my sister in a cheer competition and Sunday I am going on a long run {because sadly, I didn’t do one this past weekend!}




On top of the world.

Want to know why?

Because all my homework is done! All of it!


It’s the little things, ya know?

Anyway, I’ve had a pretty good day!

One little rant though:

Yesterday I went to Walmart and bought myself a bike pump suitable for my bike. Well, this morning I was planning on riding it to school, since I neglected to last semester! Before I left, I decided to pump up my front tire a little more, because it wasn’t as firm as the back tire. Well, in the process of doing so, the presta valve BROKE OFF! WHAT?! The screw legitimately snapped in half. I was not happy. However, rather than let it make me frustrated and upset, I calmly put it down, texted Sabrina, and headed to the bus!

P.S. Sabrina’s going to help me fix it later, so hopefully I’ll be able to ride to school tomorrow!

Other than that, I’ve had a wonderful day! 

I had bio (which ran 20 minutes shorter than normal because our room was locked #victory!) and then chem. My chem professor cracks me up, so it wasn’t too bad!

Then, I headed to the gym for some strength training. I read all about how strength training a few times a week (along with my running schedule) makes one leaner and fitter. I realized I’ve been neglecting true strength training for a while, so I decided to get back at it!

It really really really helps me to make a list of what I’m going to do before I go, that way I’m not awkwardly floundering about.

My workout: {You’ll notice reaaaaal quick that I don’t know the technical names… Hahaha}

  • 15 x 3 stability ball pikes
  • 15 x 3 squats w/ 11.2# medicine ball
  • 8 x 3 assisted pull ups {16 at 60# assisted, 8 at 50# assisted}
  • Calf raises w/ 10# plate: {15 center, 15 right, 15 left, 15 center} x 2
  • 30 (ea. side) oblique dips w/ 10# weight (ea. side)
  • 15 x 2 push ups
  • 1:30 plank
  • 30 (15 ea. side) lunges w/ 10# dumbells ea. hand
  • 30 crunches {normal, straight legged, bent legged –> 10 ea.}

And there you have it! It may not seem like anything for some, but for me it was great!

Afterwards, I ate my lunch {salad w/ chickpeas, cucumber, broccoli, tomatoes + a baggie full of straw/black/blueberries!} then headed to the library.

I had an hour to kill before my lab meet up at 1, so I decided to knock out some homework. I read a model critical analysis on a poem to be ready for the one I had to do as soon as I got home, and then I did some chemistry learning modules and quizzes!

Huzzzaaahhhh! Now I just need to keep up the productivity for the entire semester! ;]

When I finally got home, I had two cups of iced coffee and two carrots with peanut butter.

May I just say HOLY YES TO CARROTS AND PB. I had never tried the combo before, but it was so freaking good. Yes.

Anyway, after that I did my critical analysis on “Living in Sin” {that’s probably supposed to be italicized but whatevs} by Adrienne Rich and then finished my chem homework.

Now I’m doing this! :]

It feels good to be accomplished!
